Mixed-milk cheeses offer new opportunities to combine the diversity and properties of different types of milk with the development of innovative, higher value-added cheeses. In this context, demonstrating the distinctive quality of these products is essential. One of the challenges long demanded by the sector has been the availability of a method to determine the proportions of milk blends in cheese. A unique method has recently been developed to accurately quantify milk mixtures. This method is currently being validated for the development of a UNE Standard that will standardize the procedure and make it accessible to any laboratory.
