2026-10-06 16:00 2026-10-06 16:45 Europe/Madrid What a zero-loss plant looks like, and what it takes to run one
What a zero-loss dairy or beverage plant looks like, what has to be measured to get there, and what producers have recovered along the way.
Plants already know product goes to drain. Mass balance has been telling them for years. What has been missing is a way to see it happen.
Radio-frequency measurement changes that. Instead of inferring from time, volume, conductivity or turbidity, an RF sensor reads the liquid itself, inline and in real time, and reports what is in the pipe right now.
That is what makes Industrial AI possible on the liquid phase of a factory. Not better dashboards, but a direct measurement to act on, in milliseconds.

In the food industry, moisture, nutrients and surfaces favour their development, and they can become a persistent source of contamination and pathogens such as Listeria monocytogenes, Salmonella and E. coli.Traditional cleaning and disinfection methods may have limitations when it comes to eliminating them, and their detection requires specific tools. Mixed-milk cheeses offer new opportunities to combine the diversity and properties of different types of milk with the development of innovative, higher value-added cheeses. In this context, demonstrating the distinctive quality of these products is essential. One of the challenges long demanded by the sector has been the availability of a method to determine the proportions of milk blends in cheese. A unique method has recently been developed to accurately quantify milk mixtures. This method is currently being validated for the development of a UNE Standard that will standardize the procedure and make it accessible to any laboratory.

2026-10-07 14:00 2026-10-07 14:45 Europe/Madrid Fiber and Beyond: The Ingredients Redefining Food and Beverage

Fibre is experiencing a landmark moment. Driven by viral trends such as fibermaxxing and growing interest in gut health, it has become the most recognized nutrient among European consumers: 92% know it is important and 71% pay attention to their intake. Even so, most consumers do not know how much fibre they actually consume.

In this session, Innova Market Insights combines consumer and product launch data from across Europe to explain how the market is evolving. We will explore why gut health is increasingly seen as a benefit for the whole body and how fibre is expanding into categories such as sports nutrition and soft drinks. We will also examine the fastest-growing ingredients, including tapioca, beet and soy fibre, and what leading brands and retailers are doing in this space.

A session for brands and ingredient suppliers looking for the next growth opportunities in fibre, prebiotics and digestive health.

As consumers become increasingly informed and the obligations of the Packaging and Packaging Waste Regulation (PPWR) come into force, packaging has become a key factor in meeting new market expectations, sustainability goals and regulatory requirements.

How are consumers’ purchasing and consumption habits being affected? What obligations actually apply and how has the regulatory framework evolved (EPR, declaration of conformity, etc.)? What criteria should be considered (eco-design, labelling, etc.)? How should companies adapt? What initiatives and areas of work are being promoted across the sector?

2026-10-07 16:00 2026-10-07 16:20 Europe/Madrid Do We Need More Foodtech Accelerators? Europe has built more than 200 foodtech accelerators and incubators in the last decade, yet investment has stalled and few startups scale to industrial impact. This keynote doesn't call for fewer accelerators: it calls for less duplication, more specialization, and better-connected infrastructure between innovation and the industrial scale-up it requires (pilot plants, TRL 6-9, manufacturing). Drawing on verified data from EIT Food, DigitalFoodLab, AZTI, IRTA and AINIA, and real cases from Spanish startups, Juan proposes where the next euro should go if the real goal is getting food innovation to market. 2026-10-07 17:00 2026-10-07 17:45 Europe/Madrid The IT Recipe That Enabled a Leading Meat Manufacturer to Grow 5x Without Losing Control

Ricardo Roque will share the story behind BRAINR, from his years leading technology at Grupo Lusiaves as CEO to building a new operating model for food factories: the ERP runs the business, while a Factory Operating System runs the factory floor.

Ricardo Roque will explain the IT recipe that enabled Grupo Lusiaves to grow fivefold without losing control of the factory, and how that experience became the foundation for BRAINR, which since 2023 has managed more than €1.6 billion worth of meat production annually.
